Let’s guess! a fruit that ripened and rotten too quickly, even if we keep it in the refrigerator, just intervention of time, it turns spotted and ugly from beautiful and iconic golden complexion.   Yes, you guess right!! It’s Banana. Remembering that time when I was working in a healthy food delivery service company we bought a cartoon of Banana to give as supplies in the evening would be spotted the next day. That is why suppliers and transporters are always puzzling to solve all kinds of a hindrance to transport this fruit.   You can see confusion among many people about banana, is a banana a healthy choice or not?  But the study shows that Banana has lots of nutritional value like Vitamin B6, Fiber, Potassium, Vitamin C, Magnesium, and Manganese. Banana is a SUPERFOOD if we do not count some negative attention. Moreover, you will be astonished to hear that about 100 billion bananas are consumed each year globally estimated and presented by FAO. I have shared this information with you just to ensure how important the bananas are as our food and main ingredients for Banana Cake.

As I said in the previous recipe of butter cake invention of baking powder and baking soda changes our thinking regarding food preparation, especially in baking.  Banana Cake is one of the graces of that invention. In 1930, we noticed a banana cake recipe using the mashed banana as the main ingredients in a cookbook in the USA. From 1930 to 2021, after a long journey, this ubiquitous Banana Cake recipe could be found in thousands of variations now. In the shape of loaf cake, layered cake, fritters, or pancakes. Our Banana Loaf Cake requires Banana Pure or Mashed Banana, Oil or Clarified Butter, Milk, Sugar, Flour and Baking Powder, and Baking Soda. I hope, this very simple, easy recipe will make us happy. Banana Cake Recipe
Ingredients Metric Measurement
Banana (Fully Ripened) 500 g
Sugar 500 g
Salt 5 g
Eggs 250 (5 PCs) g
Banana Essence 10 g
Milk 250 ml
White Oil or Clarified Butter 250 ml
Baking Soda 5 g
Baking Powder 5 g
Flour 525 g
Method: Baking Temp & Time:  
1. Scale ingredients accurately. Have all ingredients at room temperature (70°F/21°C).

2. Place the fully ripe banana and Sugar in the mixing bowl. With the paddle attachment, beat them in medium speed, till it is smooth and become puree. This will take about 8 to 10 minutes. Some bakers prefer to add the flavorings, salt with the sugar to ensure uniform distribution.

4. Append the eggs a little at a time. After each addition, strike until the eggs are absorbed before adding more. After the eggs are beaten in, mix till light and fluffy. This step of mixing will take about 5 minutes.

5. Rasp down the sides of the bowl to ensure even mixing.

6. Add milk with fine stream and let them incorporate and whiter.

7. Reduce speed and add oil as like as milk.

8. Very slowly append sifted dry ingredients (Flour, Baking Powder, and Baking soda) and fold with Banana-sugar mixture. Rasp down the sides of the bowl occasionally for even mixing. Do not over mix cause gluten development will make the cake taught.

9. Pour mixture in the greased and paper-lined pan, arrange on a tray, and bake.

 

Note: Proper Mixing and Baking is very important for this recipe. Otherwise, the cake will be dense, heavy, and under baked.

 

1.      Temp: 200°C

2.      Time: 30-35 minutes

3.      Panning:

Pan Size: 8”x4”x2.5”

Pan Prep: Greased and Paper lined

Deposit: 800g +-

4.      Prepare Three Pan.
